Maraschino Cherries

Forget the things that come in jars at the store. You know, the bright red or green things that, honestly, it is difficult to believe have anything to do with a cherry. Make your own. They keep for a long time in the fridge (several weeks) as long as they stay submerged in their syrup. Here is a recipe for about a cup and half of cherries and liquid combined. Use any extra syrup on pancakes or french toast later.

  • 1 cup water
  • 1/2 cup sugar
  • 2 oz lemon juice
  • a pinch of salt
  • 1/2 star anise (4 segments)
  • 1/2 lb cherries (use frozen unless you have a glut of fresh)
  • 1/2 tsp almond extract

Boil the water, sugar, star anise, and lemon juice until the sugar dissolves. Add the cherries and almond extract and simmer for 10 minutes.
