I made a delicious dinner a couple weeks ago, but we had to eat it very quickly because we were running late to a concert. I didn’t take any photos. Anyways, I did two of the three dishes straight from a recipe. Here is a recipe for roast chicken with two lemons. Simple, cheap, elegant, and healthy. It is a good idea to make a pan sauce by: squeezing any juice remaining in lemons into pan, adding white wine and maybe garlic, cook vigorously while scraping bottom of pan. I also made arugula and goat cheese ravioli, since arugula was still holding on in the garden despite the cold. Finally, I made an asparagus dish. You don’t need a recipe: saute asparagus in butter, with shallots and almonds, salt and pepper. Squeeze lemon on top when done.
All together, these dishes made for a very harmonious meal.
