Feta Cheese Grits

I made this up on Sunday morning based on what we had around.

Grits with Feta and a Half Boiled Egg (serves 2):

  • 1/2 cup corn grits
  • pinch salt
  • black pepper
  • 1 1/2 cups water
  • 2-4 oz feta cheese, crumbled
  • about 1 tbsp olive oil
  • diced red onion
  • 2 eggs

Half boil the eggs: place in gently boiling water for 6 minutes. Very carefully remove the shell.

Boil water with salt and black pepper. Add grits, then reduce heat to low. Let simmer, stirring, until the mixture is thick and all water is absorbed. Stir in the olive oil to taste, then add the crumbled cheese. Serve with red onions on top, then add a half boiled egg on each serving.
