Rhubarb Liqueur (makes about 2 L):
- 1 1/2 cups water
- 4 cups fresh rhubarb, 1/2 inch lengths
- 3 cups sugar
- 1 tsp orange zest
- 2 green cardamom, lightly crushed
- 2 slices ginger
- 2 cups 100 proof vodka
- 2 cups white zinfandel or other rosé
Boil water, rhubarb, orange zest, cardamom, ginger, and sugar until sugar dissolves. Let cool until barely warm, then mix with vodka and wine. Put in a clean jar and let sit for 2 weeks. Strain out the solids, bottle, and let sit 2 more weeks. Best served chilled.
