Onion Marmalade

Onion Marmalade (2 cups):

  • 1/4 cup olive oil
  • 4 large yellow onions, thinly sliced
  • 3/4 cup sugar
  • 1/4 cup balsamic vinegar
  • 1/4 tsp salt
  • dash ground black pepper

Saute the onions in the oil over medium heat for 20-25 minutes, until they turn uniformly golden brown. Add the sugar and stir for a few minutes, until melted. As the onions turn a rich brown, make a space in the center and add vinegar, then stir in. Season with salt and pepper. Keeps for 2 weeks in the fridge.
